Poached Sardines on Steamed Spinach
Fresh sardines are available from your local fishmonger – ask him to clean them for you. Put the sardines in a stainless steel fry pan on your hotplate and cover with filtered water. Put on lid and bring to a gentle boil. Reduce to simmer and cook until fish flakes easily with a fork.
While the sardines are cooking, make your sauce. Put a small steel saucepan on the stove, add a tablespoon of extra virgin olive oil, 2-3 cloves of finely chopped (or crushed if you prefer) garlic, one large vine-ripened tomato chopped, and tear in some fresh basil leaves. Cook on a low heat until tomato is soft. Steam your spinach at the same time as the sauce and sardines are cooking.
On a plate, put your steamed spinach – the sardines go on the spinach, and top with the fresh tomato sauce.
