Grilled salmon steak with steamed vegetables
Place fresh salmon steak (one per person) under grill – top with multi-coloured peppercorns and split fresh lemongrass stalks, and a squeeze of lemon juice. Cook until the fish flakes easily.
While the fish is cooking, steam some washed silverbeet, broccoli florets, asparagus, and peas. For variety, have it with a crisp fresh salad instead. Include your favourite lettuce varieties, tomato, snow pea sprouts, and avocado.
Serve hot with dressing – one teaspoon of whole-seed mustard or crushed garlic (1-2 cloves) mixed with lemon juice (per person).
This is a great option for lunch or dinner. It can even be packed up for lunch and eaten cold.
